So I decided that "plain ole" Huevos rancheros weren't gonna cut it so decided to switch it up a bit.
The base is still corn tortillas but instead of retries beans I made a salsa of tomatoes, black beans and corn. Instead if a sunny side I just made it over easy. For cheese I used cheddar in place of queso fresco. For a sauce I made an avocado sauce consisting of: avocado, sriracha, lime juice and fat free half and half.

I'm so thankful for the La Choy teriyaki marinade - gluten free. It's so simple to make a delicious dinner these days.
Simply pour some over a chicken bread and roast it in the over covered for 25-30 minutes and your golden. Try some teriyaki salmon by pouring over a piece o salmon and baking covered or 15 minutes
They carry it at Walmart for a decent price like $2 or less!
Definitely a gluten free must have at all times in the pantry.

Gluten Free Graham Cracker Crumbs - Review
If you ever wanted a goo cheesecake or sweet pie, it must have bothered you not to find those pre-made ones in the store. At least I can make the easily with year crumbs and some melted butter.
In all honesty, I used to by their animal cookies graham cracker and grind them up myself. I guess they became smarter and started selling them already crumbled for me.
Kinnikinnick definitely has some great gluten free products on the market. Say for example the k-toos cookies.

Pizza Crust Review - Udi's
So I found this crust to be great for thin crust lovers like myself. It gets nice and crispy even without a pizza stone and bakes rather quickly. It can also withstand lots of toppings without falling apart.
The price is the most expensive that I've found this far at $5.99 for 2 at Sprouts Farmers Market. They used to carry it at Walmart for a dollar less, but I haven't seem it in a few months.
Definitely worth to stock up on when their on sale!

Favorite Gluten Free Snack
I happened upon this delicacy while shopping at HomeGoods one day.

Chocolate Mousse
Check out this recipe for making Gluten-Free Chocolate Mousse at home.
Requires only 4 ingredients!
Ingredients
6 1/2 Ounces Heavy Whipping Cream
6 ounces Semi-Sweet Chocolate
1 1/2 Ounces Sugar
1 Whole Egg
2 Egg Yolks
Directions:
Whip the cream in a mixer on high until firm and set aside
Melt the chocolate in the microwave for about 60 seconds (if needed for 30 more seconds),
set aside to cool slightly
Begin boiling the sugar with just a bit of water and use a thermometer to monitor the temperature
In a mixing bowl or stand mixer whip the egg and yolks until ribbon stage -
this is when the eggs are thick enough that you can run a "ribbon" of eggs over the top and it will stay.
Once the sugar reaches 220 degrees farenheight,
slowly add it to the whipped eggs while mixer is on highest setting
After the sugar is mixed in, add the chocolate in increments of thirds until fully combined - on medium speed
Add all the whipped cream and mix just until combined - on medium speed.
Cover with plastic wrap and set to cool in the fridge for 4 hours
Enjoy!
NY Style Cheesecake - Gluten Free

Requires only 7 ingredients!
Ingredients
Crust:
2 1/4 Ounces Gluten Free Graham
2 Teaspoons Cup Sugar
1 Ounce Melted Butter
Cheesecake:
12 Ounces Cream Cheese
3 3/4 Ounces Sugar
3 Egg Yolks
3/4 Teaspoon Vanilla Extract
2 Ounces Heavy Cream
Directions:
Preheat oven to 400 degrees (farenheit).
Melt the butter for the crust in a microwave for 30 seconds and add the graham cracker crumbs and 2 tsp sugar.
Distribute the crust and flatten inside each ramekin, bake for 5 minutes and let cool (reduce oven to 290)
Soften the cream cheese and add the sugar, fully incorporate it before adding egg yolks
Add 1 egg yolk at a time - wipe down the sides in between each addition.
Add the vanilla extract and cream when done and combine
Pour evenly into each ramekin and tap them to remove air bubbles
Bake in a water bath for 45 minutes and then let cool.

Crème Brûlée Vanilla Flavored
Check out this simple recipe for making gluten free Crème Brûlée at home.
Requires only 4 ingredients!
Ingredients
4 Egg Yolks
2 Ounces Sugar
12 Ounces Heavy Cream
1 Teaspoon Vanilla Extract
Kitchen Tools
Small Sauce Pot
Mixing Bowl
Whisk
Deep Baking Pan
Directions
Pre-heat oven to 275 degrees Fahrenheit
Heat up the heavy cream, vanilla extract and half of the sugar.
Whisk together the egg yolks and remainder of the sugar.
Once the cream starts forming bubbles around the sides, begin to temper it into the egg yolks.
Add small amounts at a time to make sure the egg yolks don't curdle.
After adding all the cream pout the mixture into the ramekins.
Place the ramekins inside a deep baking dish filled 1/3 with water (water bath / bain-marie).
Cover the dish with silver foil leaving a small opening.
Bake for 1 hour or until set
Yields 4 servings. (3.5 ounces each)

Almond Flavored Meringues
Check out this easy recipe for making gluten free Almond Flavored Meringues at home.
Requires only 6 ingredients!
Ingredients
3 Egg Whites
1/2 Cup Sugar
1/4 Teaspoon Cream of Tartar
3/4 Teaspoon Vanilla Extract
1/4 Teaspoon Almond Extract
As Needed Almond Meal
Instructions
Preheat oven to 250 degrees (farenheit) and grease a baking sheet.
Whisk together the egg whites and cream of tartar until soft peaks are achieved
Add the vanilla & almond extracts while whisking, and gradually add the sugar - whisk until stiff peaks.
Using a pastry/piping bag with a star tip, pipe even amounts onto the baking sheet.
Bake for 2 hours on 250
Let the Meringues cool for a few minutes before storing or eating
Yields 48 gluten free meringues
Prep time: 15 minutes
Cook time: 2 hours
Yields: 48 Meringues

14 Cup Powdered Sugar
1/4 Teaspoon Vanilla
20 Small/Medium Strawberries

1 Small Mixing Bowl
1 Mixing Spoon
1 Paring Knife
Instructions
Wash and core out the strawberries
Soften the cream cheese, add the sugar and vanilla extract and mix well
Using a spoon or piping bag, fill the strawberries with the cheese mixture
You can garnish with gluten free cookie crumbs or chocolate or both

Chicken Chili also Gluten Free - Crock Pot
I love spicy food and especially a good chili. What could be better than dropping a bunch of ingredients into a crock-pot and coming back hours later for some great food?
This recipe is very easy, gluten free and delicious
Ingredients
2 Boneless/Skinless Chicken Breasts
1 Whole Onion - diced
1 Cup Frozen Corn
1/2 Can Black Beans
1/2 Can Kidney Beans
8 Oz. Tomato Sauce
12 Oz Rotell tomatoes HOT
1/2 Tbsp Chili powder
1/2 Tbsp Cumin powder
1/2 Packet Taco seasoning (or make it yourself!)
1 Cup Chicken Stock
Kitchen Tools
1 Crock Pot
1 Mixing Spoon (Wooden)
1 Metal Tongs
Instructions
Place all ingredients in a Crock Pot on High for 4 1/2 hours, put the chicken on top
Using the tongs, pull apart the chicken to shreds and mix all the ingredients well.
Let cook for an additional 30 minutes (add stock if necessary)
Food is ready to be served!
Try eating it on some grilled corn tortillas
Prep time: 5 minutes
Cook time: 5 hours
Yields: 4-6 serving
Whole Foods Gluten Free Pizza
So I have been trying several different brands of Gluten Free pizza crusts. I want to compare price vs. taste.
These crusts from Whole Foods are $3.99 for 2 individuals. They are par-cooked and bake pretty quickly.
Overall I would score these 4.5 of 5 for both price and taste.
I made 2 variations of this pizza.

My Favorite Gluten Free Pizza Crust - Store Bought


They carry these delicious creatures at Fry's supermarket
$7.99 for 4 mini crusts
They are the best resemblance of a real pizza - fluffy, crunchy, and great texture
My favorite pizza toppings are: black olives, tomatoes, mushrooms, broccoli, and feta cheese

Beef & Cheese Gluten Free Enchiladas
Who could say no to some delicious gluten free enchiladas?
Ingredients
Mission Yellow Corn Totillas
Rosarita Green Chili Sauce
Sargento Reduced Fat Four Cheese Mexican
Sargento Parmesan Cheese
Meat
Hunts Four Cheese Tomato Sauce
1/2 Lb. Extra Lean Ground Beef (97/3)
1/2 Onion Finely Chopped
PAM Spray
Kitchen Tools
1 non-stick sautee pan
1 wooden spoon
Instructions
Begin by sauteeing the onion for 5 minutes
Add the beef and cook until thoroughly cooked
Add 1 cup of the tomato sauce and stir for 2 minutes
Set the beef aside for further use
Take 2 mission yellow corn tortillas and lay out flat on a microwave safe plate
Sprinkle 2 large spoonfulls of 4 cheese mexican blen on each tortilla
Add 2 large spoonfulls of the prepared beef
Roll up the tortillas and turn it upside down so the seam is facing down
Pour 1/4 cup of the green chili sauce over both tortillas
Sprinkle 2 spoonfulls of parmesan cheese over both tortillas
Microwave for 2 minutes
Enjoy your gluten free meal!!
Prep time: 5 minutes
Cook time: 10-15 minutes
Yields: 1 serving

Gluten Free Products That Can Take You a Long Way!

Breakfast - This is My Favorite! Eggs, Hash Browns & Veggies

I just love any dish that has potatoes, this is a spicy potato pancake, 2 eggs over easy, and sliced fresh veggies
This recipe is not too difficult, gluten free and my favorite food
Ingredients
2 Large eggs
1 Whole idaho/russet potato - peeled and shredded
1/2 onion - peeled and shredded
1/2 Plum tomato - thinly sliced
1/4 English cucumber - thinly sliced
1/4 cup cheddar cheese
3 tablespoons extra virgin olive oil
1 tablespoon lemon or lime juice
Salt & pepper, garlic, onion & chili powder, paprika, cumin, and cayenne pepper
Kitchen Tools
1 non-stick sautee pan
1 box grater
1 oven tray - greased
1 offset spatula - optional
Instructions
Preheat oven to 450
Begin by preparing the potato pancake, peel and shred the potato and onion
As soon as you shred the potato, add the lime juice to avoid oxidation (turning brown)
Preheat a sautee pan on a medium/high flame and add 1 Tablespoon EVOO
Add the spices to the potato mixture and stir it up together well
Grab the entire potato/onion shred, squeeze out any moisture and place it in the saute pan
Make sure to spread it evenly into 1 thin layer and let sautee for 2-3 minutes
Using a quick hand motion, swiftly flip the pancake and add 1 tablespoon EVOO
Let sit for an additional 2-3 minutes on the second side
Place the pancake on the oven tray and place in the oven for 10 minutes
When the pancake is 2 minutes from done add the last tablespoon of EVOO to the pan on medium heat
Carefully crack the eggs (leaving the yolk whole) and gently pour into the pan
After 30 seconds add the cheddar cheese
Wait another minute and gently flip the egg using a spatula or swift hand motion
Let sit for 30 second on the second side
Slice the tomato and cucumber
Food is ready to be served!
Prep time: 10 minutes
Cook time: 16 minutes
Yields: 1 serving
Split Pea Soup
Gotta love the homemade split pea soup!
This recipe is extremely easy to make, healthy, gluten free and delicious..
Ingredients
1 Whole onion - medium dice
1 Whole carrot - peeled and medium dice
2 Stalks of celery - medium dice
1 pound of dried green split peas
2 Quarts (8Cups) stock or water
Pam spray or 1 tablespoon of extra virgin olive oil
Salt and Pepper
Kitchen Tools
4 Quart stock pot
1 Wooden spoon
Instructions
Prepare and chop all veggies
Heat pot on medium/high flame, add oil or pam and begin to sautee the onions
After 2 minutes of stirring, add the carrots and celery and stir for 3 more minutes
Add the 2 quarts of stock or water and bring to a boil (stock is preferred to enhance flavor)
Now you can add the split peas and reduce to simmer for approx. 1 hour
Add salt and pepper to taste
At this point you can eat the soup as is or puree it in a blender for a smoother texture
Garnishes: sour cream, parsley and a pinch of hot paprika (or chili oil)
Variations & Notes
You can start by rendering bacon for frying fat to sautee the veggies!
Add some chorizo with the veggies for some porky spiciness
Prep time: 10 minutes
Cook time: 1 hour
Yield: 6-8 servings
