A Play on Huevos Rancheros

So I decided that "plain ole" Huevos rancheros weren't gonna cut it so decided to switch it up a bit.

The base is still corn tortillas but instead of retries beans I made a salsa of tomatoes, black beans and corn. Instead if a sunny side I just made it over easy. For cheese I used cheddar in place of queso fresco. For a sauce I made an avocado sauce consisting of: avocado, sriracha, lime juice and fat free half and half.

I love it, hope you will too!

Teriyaki Foods Made Easy -Review

I'm so thankful for the La Choy teriyaki marinade - gluten free. It's so simple to make a delicious dinner these days.

Simply pour some over a chicken bread and roast it in the over covered for 25-30 minutes and your golden. Try some teriyaki salmon by pouring over a piece o salmon and baking covered or 15 minutes

They carry it at Walmart for a decent price like $2 or less!

Definitely a gluten free must have at all times in the pantry.

Gluten Free Graham Cracker Crumbs - Review

If you ever wanted a goo cheesecake or sweet pie, it must have bothered you not to find those pre-made ones in the store. At least I can make the easily with year crumbs and some melted butter.

In all honesty, I used to by their animal cookies graham cracker and grind them up myself. I guess they became smarter and started selling them already crumbled for me.

Kinnikinnick definitely has some great gluten free products on the market. Say for example the k-toos cookies.



Pizza Crust Review - Udi's

So I found this crust to be great for thin crust lovers like myself. It gets nice and crispy even without a pizza stone and bakes rather quickly. It can also withstand lots of toppings without falling apart.

The price is the most expensive that I've found this far at $5.99 for 2 at Sprouts Farmers Market. They used to carry it at Walmart for a dollar less, but I haven't seem it in a few months.

Definitely worth to stock up on when their on sale!

Favorite Gluten Free Snack

I happened upon this delicacy while shopping at HomeGoods one day.

Very hard to find but most definitely worth the search. I've only found it once more since then.

It's a crispy rice wafer / cigar roll filled with a yummy chocolate gooey center.

Chocolate Mousse


Check out this recipe for making Gluten-Free Chocolate Mousse at home.
Requires only 4 ingredients!



Ingredients
6 1/2 Ounces Heavy Whipping Cream
6 ounces Semi-Sweet Chocolate
1 1/2 Ounces Sugar
1 Whole Egg
2 Egg Yolks



Directions:
Whip the cream in a mixer on high until firm and set aside
Melt the chocolate in the microwave for about 60 seconds (if needed for 30 more seconds), 
set aside to cool slightly
Begin boiling the sugar with just a bit of water and use a thermometer to monitor the temperature
In a mixing bowl or stand mixer whip the egg and yolks until ribbon stage -
 this is when the eggs are thick enough that you can run a "ribbon" of eggs over the top and it will stay.
Once the sugar reaches 220 degrees farenheight, 
slowly add it to the whipped eggs while mixer is on highest setting
After the sugar is mixed in, add the chocolate in increments of thirds until fully combined - on medium speed
Add all the whipped cream and mix just until combined - on medium speed.
Cover with plastic wrap and set to cool in the fridge for 4 hours
Enjoy!

NY Style Cheesecake - Gluten Free


Check out this recipe for making gluten free Cheesecake at home.
Requires only 7 ingredients!



Ingredients
Crust:
2 1/4 Ounces Gluten Free Graham 
2 Teaspoons Cup Sugar
1 Ounce Melted Butter


Cheesecake:
12 Ounces Cream Cheese
3 3/4 Ounces Sugar
3 Egg Yolks
3/4 Teaspoon Vanilla Extract
2 Ounces Heavy Cream



Directions:
Preheat oven to 400 degrees (farenheit).
Melt the butter for the crust in a microwave for 30 seconds and add the graham cracker crumbs and 2 tsp sugar.
Distribute the crust and flatten inside each ramekin, bake for 5 minutes and let cool (reduce oven to 290)
Soften the cream cheese and add the sugar, fully incorporate it before adding egg yolks
Add 1 egg yolk at a time - wipe down the sides in between each addition. 
Add the vanilla extract and cream when done and combine
Pour evenly into each ramekin and tap them to remove air bubbles
Bake in a water bath for 45 minutes and then let cool.

Crème Brûlée Vanilla Flavored


Check out this simple recipe for making gluten free Crème Brûlée at home.
Requires only 4 ingredients!


Ingredients
4 Egg Yolks
2 Ounces Sugar
12 Ounces Heavy Cream
1 Teaspoon Vanilla Extract

Kitchen Tools
Small Sauce Pot
Mixing Bowl
Whisk
Deep Baking Pan 

Directions
Pre-heat oven to 275 degrees Fahrenheit
Heat up the heavy cream, vanilla extract and half of the sugar.
Whisk together the egg yolks and remainder of the sugar.
Once the cream starts forming bubbles around the sides, begin to temper it into the egg yolks.
Add small amounts at a time to make sure the egg yolks don't curdle.
After adding all the cream pout the mixture into the ramekins.
Place the ramekins inside a deep baking dish filled 1/3 with water (water bath / bain-marie).
Cover the dish with silver foil leaving a small opening.
Bake for 1 hour or until set
Yields 4 servings. (3.5 ounces each)

Almond Flavored Meringues



Check out this easy recipe for making gluten free Almond Flavored Meringues at home.
Requires only 6 ingredients!


Ingredients
3 Egg Whites
1/2 Cup Sugar
1/4 Teaspoon Cream of Tartar
3/4 Teaspoon Vanilla Extract
1/4 Teaspoon Almond Extract
As Needed Almond Meal

Instructions
Preheat oven to 250 degrees (farenheit) and grease a baking sheet.
Whisk together the egg whites and cream of tartar until soft peaks are achieved
Add the vanilla & almond extracts while whisking, and gradually add the sugar - whisk until stiff peaks.
Using a pastry/piping bag with a star tip, pipe even amounts onto the baking sheet.
Bake for 2 hours on 250
Let the Meringues cool for a few minutes before storing or eating
Yields 48 gluten free meringues


Prep time: 15 minutes
Cook time: 2 hours
Yields: 48 Meringues


Cheesecake Strawberries

This recipe makes for a great Snack, Dessert, or Party Finger Foods
NO COOKING NECESSARY FOR THIS RECIPE!!

You will only need 4 ingredients, a bowl, knife and spoon.



Ingredients
4 Ounces Cream Cheese
14 Cup Powdered Sugar
1/4 Teaspoon Vanilla
20 Small/Medium Strawberries

Kitchen Tools
1 Small Mixing Bowl
1 Mixing Spoon
1 Paring Knife

Instructions
Wash and core out the strawberries
Soften the cream cheese, add the sugar and vanilla extract and mix well
Using a spoon or piping bag, fill the strawberries with the cheese mixture
You can garnish with gluten free cookie crumbs or chocolate or both
Yields 20 gluten free cheesecake strawberries

Gluten Free Chocolate Delight Cookies

Ingredients:
1/2 Cup Smooth Peanut Butter
1/2 Cup Nutella Hazelnut Spread
1 Cup Dark Brown Sugar - Tightly Packed
1 Whole Egg
1 Teaspoon Baking Soda
1/4 Cup White Chocolate Chips
1/4 Cup Dry Roasted Macadamia Nuts

1 Wooden Mixing Spoon

Instructions:
Preheat oven to 350 degrees and grease a baking sheet.
Mix together all the ingredients (besides the chocolate chips and nuts)
Once the batter is combined, add the chocolate chips and nuts and stir together
Roll 1 inch balls of the batter and place on the pre-greased tray (1 inch apart)
Bake for 10 minutes on 350
Let the cookies cool for a few minutes before storing or eating
Yields 16 gluten free cookies

Homemade Pizza Sauce

Check out this easy recipe for making homemade pizza sauce.


Ingredients
1/2 Onion - Small dice
4 Garlic Cloves - minced
2 Cups Canned Diced Tomato
2 Cups Canned Tomato Puree
1/2 Cup Fresh Basil - Finely Chopped (Approx 20 large leaves)
1/2 Teaspoon each Salt & Pepper

Kitchen Tools
1 Medium Sauce Pot
1 Wooden Mixing Spoon

Directions
Prepare and chop the Onion, Garlic and Basil
Saute the Onion for 3 minutes - until translucent
Add the garlic, salt & pepper, saute for 1 more minute
Pour in the tomato products and basil - stir all together
Simmer for 1 hour
Take off the heat and let cool for 20-30 minutes
Now your sauce is ready for your pizza or pasta application

Gluten Free Pizza Crust

Ingredients
1 Package of Bob's Red Mill Pizza Crust Mix
1 Package Yeast (included in the pizza mix package)\
1 1/2 Cups Warm Water
2 Large Eggs
2 Tablespoons Olive Oil
1/2 Tablespoon Honey

Kitchen Tools
1 Mixing Bowl
1 Dowel

Directions
Preheat oven to 425 degrees and grease 3 baking sheets.
Mix water and yeast - let stand for 5 minutes
Add the eggs, oil and honey to the water and mix together
Pour the flour mix into the liquid and mix until combined
Cover with plastic and let stand for 30 minutes
Divide into 3 equal portions and roll into 9" inch crusts
(an eay way to accomplish this, grease to pieces of silver foil,
place the dough between both pieces, roll with a dowel)
bake in the oven for 8 minutes - until brown edges
Now your crusts are ready to be topped and baked for 10 more minutes

Chocolate Chip Cookies Peanut Butter - Gluten Free

Ingredients:
1 Cup Smooth Peanut Butter

Ingredients:
3 Egg Whites
1/4 Teaspoon Cream of Tartar
1/2 Cup Sugar
1 Teaspoon Vanilla Extract
1/2 Cup Milk Chocolate Chips
1/2 Cup White Chocolate Chips

1 Hand Mixer / Whisk
1 Wooden Mixing Spoon

Instructions:
Preheat oven to 300 degrees and grease a baking sheet.
Whisk together the egg whites and cream of tartar until soft peaks are achieved
Add the vanilla extract while whisking, and gradually add the sugar - whisk until stiff peaks.
Carefully fold in the chocolate chips - don't mix too much
Using a regular spoon, portion evenly on to the pre-greased tray.
Bake for 45 minutes on 300
Let the Meringues cool for a few minutes before storing or eating
Yields 16 gluten free cookies

Gluten Free Beef Stew

Make this extremely easy recipe for beef stew


Ingredients
1/2 Pound Beef Stew Meat (1 Inch cubes of chuck meat)
1/2 Pound Potatoes - cut into squares
1/2 Onion - Regular Dice
2 Carrots - Regular Dice
2 Cloves of Garlic - Finely chopped
1 Can / 8 Oz. Tomato Sauce
16 Oz. / 2 Cups Beef Stock or Water
Spices: 1/4 Tsp Salt, Black Pepper & Paprika, 1/8 Tsp Cayenne Pepper


Kitchen Tools
1 Medium Sauce Pot
1 Wooden Spoon

Instructions

Prepare all ingredients, chop onions etc.
Preheat a medium sauce pot
Sautee the onions for 2-3 minutes then the carrots for an additional 2-3 minutes
Add the garlic and continue to saute for 30 more seconds
Add the meat and brown in on all sides
Add the rest of the ingredients: Tomato Sauce, Beef Stock (Water) & Spices. 
Cook on a low/medium flame for 3 hours


Prep time: 5 minutes
Cook time: 3 hour
Yields: 2 serving

Chili with Beef

Make this delicious Chili con Carne at home, in 1 hour



Ingredients
1/2 Pound Extra Lean Beef
1/2 Onion - Small Dice
1/2 Cup Diced Tomato & Jalapeno
1/2 Cup Canned Pinto Beans
1/2 Cup Beef Stock
1 Garlic Clove - Minced
Spices: 1 Tsp Salt, 1 Tsp Pepper, 1 Tsp Chili Powder, 1 Tsp Paprika, 1/4 Tsp Cayenne Pepper


Kitchen Tools
1 Medium Sauce Pot
1 Wooden Spoon

Instructions

Prepare all ingredients, chop onions etc.
Preheat a medium saucepot
Start by browning of the meat, when it's done, set aside
Sautee the onions for 2-3 minutes then add the garlic and continue to sautee for 30 more seconds
Add the rest of the ingredients: Diced tomatoes, Beans, Beef Stock & Spices. Also re-add the meat.
Cook on a medium flame for 1 hour
Your delicious chili is now ready to be enjoyed

Cook time: 1 hour
Yields: 2 serving

Gluten Free Chicken Cordon Bleu

Simple recipe for making this easy gluten free "chicken cordon bleu" at home.




Ingredients
2 Chicken Breast Filet's - Trimmed and Flattened
2 Egg Whites - Mixed with Water for an Egg Wash
1/2 Cup Mozzarella Cheese
1/4 Cup Parmesan Cheese
1/2 Panko Breadcrumbs
1/2 Crushed Potato Chips



Kitchen Tools
1 Sanitized cutting board
1 Mallet / Tenderizer
1 Cooking Tray

Instructions

Preheat oven to 400 degrees and grease an oven pan
Trim and pound out the 2 chicken breasts
Add a nice amount of salt and pepper to each breast
Place 1/4 cup mozz. cheese and 4 tablespoons parm. cheese on each chicken breast
Roll up each breast tightly,
Dip in the egg wash,
Roll in coating and place on the greased oven pan
Bake for 20-25 minutes or until chicken is completely cooked


Prep time: 10 minutes
Cook time: 20-25 minutes
Yields: 2 serving

This recipe is very easy, gluten free and delicious
It was inspired by the cowboy burger from Whole Foods (sans bacon)



Ingredients
1/2 Pound Extra Lean Beef
1/2 Onion - Small Dice
1/2 Jalapeno - Seeded & Small Dice
2-3 Ounces Sharp Cheddar Cheese - Cubed
1 Garlic Clove - Minced

Kitchen Tools
1 Mixing Bowl
1 Cooking Tray

Instructions
Preheat oven to 450 degrees
Dice the onions, jalapenos, cheddar cheese and garlic clove
Mix all the ingredients together well
Form to 1/4 pound patties on a sheet tray or silver foil
Bake in the oven for 15 minutes - until medium well done

Cook time: 15 minutes
Yields: 2 serving
